Vinification, ageing and maturation: White wine fermentation: the must is immediately separated from the skins in order to enhance freshness and fragrance. The wine is extracted mature, after undergoing months in steel vats with continuous bâtonnage in order to keep the fine lees in suspension. Sweet must is added to the wine, then it is bottled and stoppered with crown caps. The bottles are laid down horizontally in the cellar where second fermentation occurs; after at least 12 months the bottles are disgorged with riddling and restoppered with cork closures.
