Wine style: Vintage traditional method sparkling brut rosé

Harvest period: From 20th August to 30th August
Vinification, ageing and maturation: The grapes are hand-picked and put in crates, after destemming the must remains in contact with the skins at a low temperature for a few hours. Afterwards it is gently pressed and the juice obtained ferments under temperature control. In spring the wine undergoes second fermentation in bottle. It is matured on the lees for at least 36 months, after disgorgement the bottles rest in the cellar for a further 2-3 months.

Food matching: Suitable for all courses, raw fish, shellfish, white meat.
