Vinification, ageing and maturation: White wine fermentation: the must is immediately separated from the skins in order to enhance freshness and fragrance. Second fermentation occurs through temperature controlled natural fermentation. The wine is released two or three months after bottling.

Serving temperature: 10/12 C°
Food matching: Ideal with deep-fried, pan-fried or baked freshwater fish, vegetable flans, cheeses and typical cured meats.
