Harvest period: From 25th August to 5th September
Vinification, ageing and maturation: Towards the end of August we select and carefully harvest the grapes, putting them in crates. We expose them to the sun until they have reached the right degree of drying. At this stage the bunches are pressed in traditional vertical presses and the small quantity of must obtained is removed from the lees and left to mature for ten months in wooden barrels. Afterwards, it is bottled and matured in the bottle for some months.
Alcohol content: 11,5% vol.
Colour: Intense golden yellow

Food matching: Pastries, apple strudel, mature Pecorino cheese with orange blossom honey, foie gras, Parmesan cheese matured for 22 months.
