Training system: Simple Guyot – planting density 4000 vines/ha – yield 5.5 tons/ha


Harvest period: Merlot the last ten days of September / Cabernet Sauvignon the first ten days of October


Vinification, ageing and maturation: The carefully picked grapes are put in crates and then destemmed and fermented in contact with the skins in steel vats for two to three weeks, at a temperature of 20°C, with punching down twice a day. After fermentation the wine is racked into small oak casks where it remains for at least 12 months. Afterwards it is bottled and matured in the cellar for at least 12 months.


Alcohol content: 13% vol.


Colour: Ruby red tending to garnet


Serving temperature: 17/18 C°


Food matching: Excellent with grilled red meat, game and roast meats. Also very good with medium-matured cheeses.
