Vinification, ageing and maturation: Around the middle of September, we carefully select and pick the grapes and put them in crates. We expose them to the sun until the end of September, when optimum drying is reached, then the crates are brought under cover to continue drying in the shade for another month. The bunches are then destemmed, pressed and left to ferment for days. The small amount of product obtained is removed from the lees to mature naturally for 10 months in wooden barrels. Afterwards it is bottled and matured in the bottle for some months.
