Vinification, ageing and maturation: The carefully selected grapes are fermented on the skins for 5-6 days in order to enhance the characteristic aroma of Croatina grapes. Secondary fermentation takes place in stainless steel containers; we leave a small amount of residual sugar, in keeping with the winemaking tradition in Piacenza. The wine is released three months after bottling.

Food matching: This wine is ideal with cured meats (salami, coppa and pancetta), provolone cheese and torta fritta (deep-fried puffed up pastry) and boiled pork sausage (cotechino and zampone).
